My experience has been that any setting lower than 4 or 5 is not going to go over well with my players. What you see in the illustration is what I typically present in my games.
It really reminds me of the sliders in Europa Universalis II and the other Paradox Interactive games. Love it. In fact, you've made me think of a blog entry I want to write about that...
My current campaign, which is a homebrew of S&W Core and LotFP Grindhouse: http://i.imgur.com/k0ykK.png
Another slider could be: "Death of Player Characters" ... with the same labels as "People who can do magic" my setting would be at 7 or 8 (20% to 30% of 1st level PCs die each game.)
My games tend to be:
